As its translated name ‘Knight’ suggests,
it is
a cheese with a strong characteristic flavour.
Ridder is a wonderful dessert cheese best
served with
crackers and summer fruits and
berries. It can also be
used as an
appetiser,
thinly sliced in sandwiches or
melted.

Product description
Full fat surface ripened cheese made from cows' milk with
a fat content of 38% (fat in dry matter: 61%). Added ingredients:
Preservative - Sodium nitrate (E 251); Colouring - Annatto
(E 160b). Raw milk is pasteurised and cooled; starter and
animal rennet added; curds cut, pressed and moulded into
wheel shape; immersed in brine; dipped in annatto; first
ripening; washed; second ripening; labelled and boxed.

Handling and keeping qualities
Best stored in a refrigerator at 2° C - 4° C; Best eaten within 7 days of purchase when cut from the wheel.
As a dessert cheese, best served with summer fruits and berries or as
an appetiser folded into thin strips with smoked ham on a bed of crisp
garnished lettuce.
